Ted Grieb
Ted Grieb is a professionally trained chef from the Philadelphia area.  Grieb held notable positions in various restaurants before joining Lincoln Restaurant Group (LPC), owner of Dakota’s Restaurant, in 1999. 

Prior to working for LPC, Grieb served as executive chef at Dakota’s Philadelphia location. His extensive experience in restaurants around the country such as Nicholas Nicholas at the Rittenhouse Hotel in Philadelphia, Ramble Wood Country Club in New Jersey, Harbor Lights in Key West, and 219 in Alexandria, led to the birth of the Zanata concept on Long Beach Island in New Jersey in the mid 1990s.

After Dakota’s was shut down in 2002 due to a water main break, Grieb took a brief hiatus to open Houston Street in Downtown Dallas.  He then returned to Dakota’s with great authority and passion to prepare a menu for the new steakhouse concept.  In October of 2003, Grieb reopened Dakota’s and introduced his flawlessly revamped menu to the much anticipated public. Dakota’s and Chef Grieb have become a valuable mainstay in Dallas. 

Executive Chef Ted Grieb’s talent has been recognized by critics, as he recently received his 4 ½ stars for Dakotas Steakhouse.  He has mastered his craft and proves to be one of the best chefs in the Dallas/Fort Worth area. 

Grieb is now owner and chef of Zanata in Rockwall, Texas.  The Mediterranean restaurant boasts an inspiring way of cooking in a wood-fired oven. The rustic cuisine focuses on only best ingredients and highlights local, seasonal products. Ted Lives with his wife Dana and two border collies in Rockwall, Texas.

Kevin Lefere
Although raised most of his life in the Great Lake state of Michigan by his loving and supportive parents (Dorne and Ginny), Kevin was born in the shadow of the Golden Dome of the University of Notre Dame in South Bend, Indiana. It was at Notre Dame, at the tender age of 4, that he did something that would transform his life: he strapped on his first pair of hockey skates; and he's been checking and high sticking ever since. Hockey took him to Brother Rice High School, a Catholic school outside Detroit.

Kevin received his Bachelor of Science degree in Business Marketing from Western Michigan University. In 2002, shortly after graduating, Kevin migrated to Dallas and quickly signed on with Houston Street restaurant. It was there that Kevin met Chef Ted Grieb, and began his life in the restaurant industry. In 2003, Kevin was named Sous Chef of Dakota’s Steakhouse.

In June 2007 Kevin was married to his beautiful wife Camille Lefere and the two now live in Rowlett, Texas.

Alidor Lefere
There are three things that make Alidor truly happy: his family, good food, and sports. Luckily for him, there were always plenty of all three in the Lefere household. Growing up in Michigan was perfect for family reunions, football games, and pond hockey. After graduating from Brother Rice Catholic School, Alidor traveled to West Lafayette, Indiana, to study education at Purdue University. He began his teaching career back in Detroit, but soon decided to give Texas a try. In Dallas, Alidor found great success in teaching, coaching, and of course love. He soon married a fellow teacher, and his stay in Texas ended up being more permanent than he originally planned. By day you can still find Alidor engrossed in a lesson on the American Revolution, and most nights you will find him greeting guests or pouring drinks at Zanata. Always ready with a story and a smile, Alidor helps every guest feel like part of the family.

Al and his wife Jessica just had a baby named Ava who is a frequent customer (and future employee) of Zanata.
